Brewery Expansion Update:
Its been a long couple months for the Knee Deep team as we all have been working really hard building out the new brewery in Auburn, CA while maintaining production at our Lincoln, CA location. As of today, we have installed all of the fermenters (4×60 bbl. & 1×90 bbl.), brite tanks (1×60 bbl. & 1x 90 bbl.), main production brew system (4 vessel system), 90 bbl. hot liquor tank, hop dosing tanks, hop back, grain mill, grist tank, CIP system, 1.8 million BTU hour boiler, control systems for brewhouse and cellar, and all electrical. Our new brew system is a 40 bbl. brew system that will allow us to brew 30 barrel high S.G. brews and 40 barrel low S.G. beers. (S.G. = Starting Gravity). We will start brewing on the new system during the second week of December. Did we mention the expansion includes 2000 sqft. for barrel aging.

Make sure to check out our Facebook page for pictures of the expansion. https://www.facebook.com/media/set/?set=a.10151815712018624.1073741826.242077513623&type=1&l=edd4baa9b8

Tap Room Update:
If you have been following us on Facebook, you would know that we have already opened our tap room during the last week of September. For those that don’t visit our Facebook page like our Hoptologist does, we have great news for you. Our tap room is open 7 days a week. You can now visit Knee Deep and enjoy your favorite Knee Deep beer or perhaps get a sampler of all our beers to enjoy while watching our production team brew some amazing hoppy goodness. Our tap room has no walls and is open to the production floor, so if we’re brewing, bottling, filtering or throwing some bag toss, you will be right in the middle of it. “Please Don’t Feed the Brewers”.

Knee Deep soon to be available in multiple states!

After the madness of trying to put a brewery together from scratch, we have finally sat down and decided which states will be serving our beer. That is, once we finally complete our first batch on our new 40 barrel system. This is a little sneak peak of which direction we might be headed, and of course we cannot announce who will be distributing for us. But here is a little teaser for all you Knee Deep connoisseurs –

Jan/Feb/Mar:

CA – Santa Barbara, Ventura, San Luis Obispo
CA – Humboldt County
NY – All of New York
WA – All of Seattle to mid Washington
OR – All of Oregon
ID – Western portion
AK – South East Alaska
MT – Most of Montana
NM – Albuquerque
FL – Fort Lauderdale
CO – Denver, and surrounding cities

Apr/May/Jun:

NC – Raleigh
ND – Fargo
PA – Philadelphia
MI – Kalamazoo & Grand Rapids
MD – All of D.C. area
CT – North East Connecticut

We are also very excited to announce that Knee Deep will be going international sometime in 2014.

New Beers

We have some new beers on the horizon. During the month of December we will be re-releasing the California Brown Ale that was a great hit during the 2012 MEPS series. We are also expecting our Caribbean Rum Barrels to arrive during the second week of December. Your probably asking yourself, “what are they going to do with those barrel’? Well, we’re going to barrel aged our Imperial Tanilla in the Caribbean Rum barrels, and yes, we will be adding some vanilla beans to the barrels.

Part of the brewery expansion included a two vessel 3.5 bbl. brew system. We will have our new pilot system up and running during the month of January and will allow us to fill up our new 1 x 3.5 bbl. and 2 x 7 bbl. fermenters. This means lots of new and rare beers that will only be available in the tap room or at select retail locations.
