Press Release:

(Chicago, IL) – Revolution Brewing, Illinois’ fastest growing craft brewer, is proud to announce the release of Dos Osos IPA, a collaboration brew from Revolution and Firestone Walker Brewing Company of Paso Robles, Calif.

“This IPA has a subtle malt base and is dry, crisp and clean, which is a trademark of the hoppy ales from both Revolution and Firestone,” said Revolution Brewing Brewmaster Jim Cibak.

Dos Osos IPA brings together two forces in American craft brewing, Cibak of Revolution Brewing and Dustin Kral, Firestone Walker’s Head Brewer. The two brewers, former colleagues at Firestone and longtime friends, have created what Cibak called a “Central Coast IPA,” named for the central California coast.

An array of hops including Warrior, Chinook, Centennial, Cascade and Citra infuse this ale with aromas and flavors of fresh flowers, citrus and passion fruit. The finished product is a clean, refreshing IPA with a crisp bitterness and complex hop bouquet.

The collaborative name Dos Osos, meaning “two bears,” represents both the bear on the California state flag and the Chicago Bears.

“Jim and I were once coworkers at Firestone Walker, but more importantly, we are extremely good friends with very similar brewing styles and a passion for sessionable beers,” Kral said. “Both of us decided to brew a beer that we could get together and drink.”

Dos Osos (was) released on draft on May 29 at the Revolution brewpub, 2323. N Milwaukee Ave., and at the Revolution Brewing tap room, 3340 N. Kedzie Ave. Dos Osos will also be available in 22-ounce bottles available for purchase at the Kedzie Avenue tap room and at various retailers where Revolution beer is sold. The collaborative beer (debuted) at the West Loop Craft Beer Fest in Chicago on May 25.
