We always have at least two different barrel select Bourbons that the entire staff took part in choosing. With these programs we not only get all of one particular barrel’s worth of Whiskey but also the empty oak cask. Instead of letting them dry and fall to splinters, we send them off to some of our friends in breweries (you might recall Zeke’s Belly Up that Golden City Brewery has done in the past). The folks at Funkwerks were ecstatic at a proposal of this nature.
We sent off two barrels (one Buffalo Trace and one Eagle Rare) and they have since aged a Cocoa Nib, Dark Saison in. After a few months we blended the two and even added a splash of the base beer to bring back the distinct yeasty flavor that all of Funkwerk’s beers have. We settled on the name SOLSTICE for the beer as it was right around the winter solstice that this project began. The image of the mythical Green Man is shown on the label as this was a deity that oversaw the transformation of seasons, the growing energy of earth bases elements and represented the woods. Oak barrels come from trees, trees in woods and our beer in oak barrels, makes this a fun tie in.
Very limited kegs were filled and bottles will only be sold at the brewery (around 10 cases) and at Mile High Wine and Spirits (40 or so cases). We will begin selling them to the public on the 28th of January.
