(Seattle, WA) – Elysian Brewing and Tom Douglas Restaurants’ Prosser Farm have teamed up to create Saison of the Witch, a pumpkin saison–just in time for Oktoberfest activities and harvest pairings in the restaurants.
The brew was made from 120 pounds of roasted Baby Pam pumpkins, from just across the pass in sunny eastern Washington. Fennel fronds and bulbs also went into the mash to lend some aromatics and a soft herbal background. This saison will make an exciting showing with a medium amber-peach color and a 5.6% ABV.
The brew will be available at many of the Tom Douglas restaurants for the month of October (or as long as it lasts!). Customers can expect to find pairing menus and harvest celebration functions highlighting the close of the season at the farm, and the beginning of gourd-worship. The company-wide debut of the beer [was] Friday, October 2.
Prosser Farm is a 5 acre garden, managed and cultivated by Tom’s wife Jackie, her father and stepmother, and a team of amazing farmers, including a cook and server from the restaurants. The farm provides the restaurants with organically grown vegetables for six months out of the year, with the heavy-hitters being cucumbers, green beans, and heaps and heaps of tomatoes. This year to date, the farm truck has delivered over 12 tons of produce straight to the Tom Douglas kitchens. Along with being a home for family, friends, and staff, Prosser farm is a way to stay connected with our food (and beverage), from the time it goes into the ground until it reaches our customers. Tom Douglas Restaurants is proud to collaborate with the pumpkin masters at Elysian on this exciting project, and to use this produce in a new and seasonal way.
