(Fort Collins, CO) – Odell Brewing has a new Single Serve Series bottle release planned for December.
Here are the details that Odell Brewing Brewer/Cellarman, Joe Mohrfeld, shared with me over the weekend…
Following on the heals of Saboteur and Deconstruction, we at Odell have been working on our latest creation, Avant Peche an Imperial Porter barrel-aged with organic peaches. With a target release of early December (pending label approval), we plan to have this unique creation ready to celebrate our anniversary as a brewery and for the holiday season.
Production Manager, Brendan McGivney, explains, ”With Avant Peche, we are appropriately celebrating the 21st birthday of Odell Brewing Co. by honoring our traditions as we continue to evolve our single serve offerings through innovation and experimentation. Paying homage to our roots, former Brewmaster, Doug Odell, has crafted an Imperial Porter based on our classic Cutthroat Porter recipe, which we Brewers took in an entirely new direction.”
We began by brewing Doug’s recipe, first on our pilot brewhouse and then our larger 50 barrel brewhouse. Next, drawing inspiration from the process we underwent in brewing Deconstruction, and from the culinary trend of deconstruction, we aged parts of the Imperial Porter in different varieties of oak barrels with the following yeasts: our house Brettanomyces, Saboteur, and Fester, our proprietary local wild yeast cultured for Deconstruction.
After allowing parts of the beer to age in the different barrels for varying amounts of time, we added fresh whole organic peaches grown at Delicious Orchards in nearby Paonia, CO. The peaches add a subtle fruity note and soft velvety mouthfeel that balances the roasted coffee and chocolate backbone. The different wild yeasts add complexities of lemon, grapefruit, white wine, and pineapple among other flavors, which all compliment the rich body and the soft peach in this 100% bottle conditioned creation.
If you stop by the taproom on any of the Fridays during our Dark Days of November you will have an opportunity to taste a different complexity of this beer each Friday where it will be poured from a Firkin and introduced by a Brewer. On the last Friday of November we will be tapping a special Brewers Blend firkin of Avant Peche for taproom patrons as a preview of what this beer may and will become.

In addition to the above, it’s worth noting that Odell did something very unusual for the release of Deconstruction and it may just be the first time that a brewery has ever done it. The brewery publicly released its Statement of Process, a document that lays out specifics on how the brewers made the beer. The document is necessary for getting the beer approved for consumption if being distributed to multiple states.
The percentages of the ingredients used in the Deconstruction SOP are scratched out but everything else is out in the open. Even if you are not a homebrewer and may not understand everything the document says, it provides some insight into what brewers go through in getting the government to approve their sometimes very complicated beers.
