Another brewery projects to brew at 10k+ barrel pace in first year

This is starting to get nutty but all the best to ’em.

The most apt word to describe brothers Jesse and Samuel Evans is ‘ambitious.’ They aim to have their New Chicago Beer Co. operating at a clip of 12,000 barrels in their first year, vaulting over several smaller local breweries if they hit their target. But that’s not all. They’re going to do it with virtually zero waste. Their spent grains will feed tilapia, mushrooms, and an anaerobic digester that will power their brewery and the rest of the building they’re in

  1. Is it normal for a start-up brewery to withhold basic info like the kinds of beer they’ll be brewing or what format(s) it will be available in?

    I wasn’t able to locate anything more specific than “2012” for New Chicago Brewing Co. Is it possible that they just haven’t finalized anything yet?
